Cream of Potato Soup

3 good-sized red potatoes, roughly cubed
1/4 of an onion, choppedĀ 
2 Tbsp butter
1 1/2 C heavy cream
1 tsp ground coriander
1 tsp Sriracha sauceĀ 
1/2 C cheese
sea salt to taste

Boil potato hunks until soft. In the meantime, brown onions in butter in a skillet. When browned, add cream and bring to a boil. Reduce heat to simmer and mix in coriander and Sriracha sauce. Continue simmering while you put the potatoes in a food processor/ blender. Process to a chunky paste and put back in pot. Cream sauce is finished when it has a nice light brown look. Mix into potatoes until blended, adding cheese (I used shredded swiss but shredded cheddar or chunks of mild goat cheese would also be good) and salt to taste.

It’s cold out there. Go make this and warm up already.
